gave me

 cookbook for my birthday
and I LOVE this book!!
I have carried it room to room 
in the car
and back
since I got it..
 “lasterday” which is Mighty Mouse’s way of saying “yesterday”
I went to the grocery store to gather a few goods 
so that I could try a few her recipes
because this book is FULL of 
“our kind of eatin’!
now I don’t know about your man
but my man
could live on
and would be perfectly happy 
from now until eternity
meat, potatoes, bread and sweet tea
so I chose 
PW’s Twice-Baked New Potatoes
the verdict:
DELICIOSO!!
I had to substitute a couple of things because
as I have previously stated
 I am extremely absent minded
and even with a list
I forgot 2 ingredients: sour cream and Monterey Jack cheese
so I substituted french onion dip and cheddar cheese
I also cut the recipe in half 
because I am only feeding a small herd..
but
here’s her recipe if you want give it a try!
12 new potatoes
2 tbsp olive oil
4 oz cream cheese
1 and a half grated Monterey Jack 
1 tbsp minced chives
1  finely minced garlic glove
SnP to taste 
preheat oven 375
drizzle OO over potatoes
roast for 20-25 minutes until tender and skin is slightly crisp
halve the potatoes
spoon out the insides
take the scooped out potatoes 
add cream cheese, sour cream, Mont Jack, chives, garlic and SnP to taste
mash until smooth
scoop mixture into potato shells
bake 20-25 min
